Firm textured, this mushroom is considered one of the most “gourmet” of the Oyster like mushrooms. This mushroom has been attributed to having anticancer properties. A saprophyte on elms, beech, cottonwoods, maple, willow, oak, and other hardwoods. Grows good on supplemented sawdust such as oak, alder, beech, and elm. It is easy to grow, very tasty, and lacks the extremely high spore loads associated with other oyster species.
