This is a tropical, warm-weather mushroom known as salmon or strawberry oyster. It fruits from 65-85 F and thrives on high temperatures. Pink Oysters fruit wonderfully on pasteurized chopped wheat straw. Also fruits abundantly on hardwood logs. This mushroom has a slight tartness but mellows out to a nutty flavor when sautéed. Consumption of this and other Oyster mushrooms produce Lovastatin, which decreases cholesterol.
