
Pleurotus eryngii (also known as king trumpet mushroom, French horn mushroom, king oyster mushroom, boletus of the steppes, trumpet royale) is an edible mushroom native to Mediterranean regions of Europe, the Middle East, and North Africa, but also grown in parts of Asia.

This mushroom fruits between 60-75 F. It is an aggressive colonizer and fruits well on pasteurized chopped wheat straw, on newspaper, or on hardwood logs and stumps. The flavor is reminiscent of shellfish or crab, and this fungus mixes wonderfully in a stir fry, risotto, or in tossed in pasta. Consumption of this and other Oyster mushrooms produce Lovastatin, which decreases cholesterol.
